Trust me when I say that you have to make this for dinner! This is a must. Even if you don't think you are a fan of sweet potatoes. It is so good for you, affordable, and easy. And my new favorite soup. In fact, I am actually making it for dinner again tonight. And topped off with a little tempeh bacon equals perfection.
Creamy Sweet Potato Soup
with tempeh bacon
serves 6-8
What You Need:
1 large yellow onion
4 cloves of minced garlic
2 large, or 3 small carrots, peeled and chopped
salt and pepper
3 Tbsp. extra virgin olive oil
3 large sweet potatoes, small chop (I did not peel them)
2 tsp. salt
1/2 tsp onion powder
1/2 tsp paprika
3 "no salt added" Rapunzel brand vegan vegetable bouillon or any vegan vegetable boillon
6 cups water
2 cups unsweetened almond milk
salt and pepper to taste
2 packages Lightlife tempeh bacon, baked or placed under a broiler until crisp.
To make:
Heat the olive oil in a large soup pot. Add the onions, garlic, carrots, and a pinch of salt and pepper. Saute for about 5 minutes, until the onions and carrots are slightly tender. Then add in the chopped sweet potatoes and saute for 5 more minutes. Add the salt, onion powder, paprika, vegetable bouillon, and water. Simmer for 20 minutes, partially covered until the sweet potatoes are very tender. Puree the soup either with an immersion blender or in a Vitamix or regular blender in batches. Return blended soup back to the soup pot and stir in the almond milk. Heat for a few minutes. Add any additional salt and pepper to taste, top each bowl with crispy tempeh bacon, and enjoy.

This sounds right up my alley, Morgan! I love sweet potato soup, although I've never tried tempeh bacon. Wish I lived near a Whole Foods!!! xo
ReplyDeleteCan you believe I only had sweet potato soup once, and I don't even remember how good it was? I love sweet potatoes. And I LOVE potato soup. I eat lots of squash soups, but not sweet potato soup. AND I was just thinking the other day about it and wondering why I never made it before?? This looks amazing. I never got into tempeh bacon, I think bc I never liked bacon. But I need to give the tempeh bacon a try. If I no likey, I will omit ;-)
ReplyDeleteAlthough my mom claims that when I went vegetarian when I was 12 that I said that bacon was the hardest thing for me to give up? And I think she's tripping because I can't see myself ever saying that. I never liked pork products at all. I told her it must have been another vegetarian that said that to her haha. Hey Morgan!I love sweet potatoes. but I cant buy american organic sweet potatoes... :( I can buy Japanese sweet potatoes, its little bit different. but I love both ;) anyways, your soup is amazing! I wanna try to make it!!! I WOULD LOVE IT! thanks awesome girl:)

@Laury...Aw girl, you are my FAVE ever! You went vegan at age 12!!!!! dang...you were ahead of your years girl. I first dabbled with veganism at age 14 or 15. TRUST your girl Mo when I say that you have to have this with the tempeh bacon. It is nothing like regular bacon. Its totally good for you and it just kind of gives a smokey flavor from the spices and smoke they add to the product. But its NOTHING like pork or trust, I would not be eating it! haha. It totally makes the soup extra smazing. <3 <3 <3

I have never tried them in a soup, but now I am going to. We have really been working our magic this week on the humble sweet potato.
